Novo Fogo is the cachaça that put Brazil's national spirit on serious American back bars. Founded in 2010 by Dragos Axinte, it's made at a small distillery in Morretes, in the state of Paraná, tucked into a pocket of Atlantic rainforest where the sugarcane is grown organically on the estate and cut by hand. The fresh cane juice ferments with natural yeast and is distilled once in a copper pot still, and the whole operation is certified USDA organic and carbon negative, with a share of every case funding the brand's Un-Endangered Forest reforestation project. Single Barrel is Novo Fogo's one-cask program: cachaça aged up to three years in charred American oak, then bottled one barrel at a time at that barrel's own strength, so proof and character shift a little from cask to cask, and the label tells you which barrel you've got. The oak brings burnt caramel, butterscotch, and vanilla over the spirit's natural cane and tropical fruit, with a long, smooth finish that has more in common with a good aged rum than with the cachaça most people know from caipirinhas. Sip it neat, or use it in place of bourbon in an Old Fashioned.Buy Novo Fogo Single Barrel Cachaca online with fast shipping right to your door.
