Horseradish vodka — khrenovukha — is one of the oldest flavored spirits in Russia, a fixture on the zakuski table for centuries, and Polugar No. 5 is the historically faithful version. It's built on bread wine, the pot-distilled grain spirit that was Russian vodka until Tsar Alexander III ordered every pot still in the country destroyed in 1895 and handed distillation to taxed government column stills. Vodka historian Boris Rodionov rediscovered the original recipes in 18th-century documents at the Russian National Museum, and because Russian law still forbids the method, he built Rodionov & Sons in a forest in Poland, reconstructing copper pot stills from period drawings. No. 5 starts from a rye-and-wheat bread wine, triple distilled, then infused with fresh horseradish root before the final distillation so the heat and aroma bind into the spirit rather than sitting on top of it. It's clarified with egg whites, filtered through birch charcoal, and bottled at 38.5% ABV. Expect fresh-grated horseradish and warm rye bread on the nose with a whiff of dill and black pepper, opening into an oily, weighty palate where the horseradish arrives as a clean, sinus-clearing heat over a bready, faintly sweet base, finishing dry and warming rather than harsh.
